Cheese and Bacon scones

275g SR flour
100g butter
150g grated cheese
150ml milk
1 egg
Pancetta, Lufa packet, approx an inch by 3 inches

Preheat oven to 200C

Using magic pastry fork, blend butter into flour and then cheese. Chop pancetta and chives, add. Beat milk with egg, add, mix, adding more milk or flour as needed. Shape into 4 hand-size balls, flatten onto baking tray. Bake for 25 mins.

You can cut them into triangles after they are baked if you want to.

Perfect with butter, cheese, egg, soup, anything where a normal person would eat bread. Great hot from oven, keeps… at least overnight, they have never lasted long enough to know how long they might keep.
