Choc-chip Ricotta Cake

500g sheep ricotta

5 ounces vanilla sugar

4 eggs

10 ounces Self-Raising flour

2 ounces semolina

8 ounces excellent tiny chocolate chips, at least 50%

4 ounces melted butter

  1. Preheat oven to 180C
  2. Put butter to melt
  3. Beat ricotta and sugar in mixing bowl with whisk
  4. Add eggs one at a time, beat
  5. Add flour, semolina, choc chips, stir in with spoon
  6. When all mixed in, add melted butter, stir in
  7. It will be really firm, press into square dish
  8. Bake for 35 mins, cool in tin for an hour, cut into squares.
