500g sheep ricotta
5 ounces vanilla sugar
4 eggs
10 ounces Self-Raising flour
2 ounces semolina
8 ounces excellent tiny chocolate chips, at least 50%
4 ounces melted butter
- Preheat oven to 180C
- Put butter to melt
- Beat ricotta and sugar in mixing bowl with whisk
- Add eggs one at a time, beat
- Add flour, semolina, choc chips, stir in with spoon
- When all mixed in, add melted butter, stir in
- It will be really firm, press into square dish
- Bake for 35 mins, cool in tin for an hour, cut into squares.
